Here is the place to purchase specialty coffees roasted and ground to your preference. Coffee is normally sold in one-pound bags with a two-pound minimum order. Please enjoy my coffee at its freshest, and consider purchasing more often rather than keeping lots for a longer period of time. Coffee is always best when brewed fresh ground, and it's worth it to buy a good quality burr grinder. Roast & Grind levels: City Roast is equivalent to a medium roast, and Full City is darker. The French Roast option has recently been removed. I believe that taking a coffee too dark results in charred, rather than bold, coffee. It even risks the beans igniting in the roaster! There is a lot of thought and expense that goes into choosing green coffees. Rather than letting all that go up in smoke choose a bean that, by its nature, has a bold character if that's what you prefer. 

Special Requests?  If there's a coffee you're longing for chances are we can find it. Remember that coffee is an agricultural crop that varies from season to season. The brew you've craved since that special Central American vacation in 1993 won't taste exactly the same but we'll make every effort to find the origin. 

It was a few years ago when the movie "Chocolat" came out that I knew the alchemy of chocolate had to be somewhere in my future. After nearly a year of working on it with a very capable and patient mentor, perfecting my techniques, it's a work of art! My "Coco Maya" line of roasted cocoa nibs and handcrafted chocolate is now available online. This has been a major undertaking. The process of creating fresh chocolate bean-to-bar is incredibly labor intensive. At this time  cocoa nibs (roasted cacao beans, in their thin husk) are sold online in a one pound bag. The semi-sweet chocolate is sold in bar form. Forming fancy truffles and decorated chocolates is a task I'll leave to others - it's the intense, exotic taste of chocolate that is important to me. Chocolate is a 5-day endeavor, so a week is needed to process orders. 

There are only a handful of companies in the US currently roasting cacao and processing it to pure chocolate - and Princess Valiant Coffee is one of them. Because of the significant time and effort involved, Coco Maya Chocolate may seem a little expensive. The cacao I use is specialty cacao - not commercial grade. You've likely never had chocolate quite as fresh as Coco Maya. The only additions to the semi-sweet chocolate are sugar, cocoa butter, and organic vanilla. There are no preservatives, no fillers, no soy lecithin or other chemicals that most of us can't pronounce. Allow yourself the luxury!

Bolivian Caranavi
AECAR Cooperative

Luscious and full bodied with a sweet floral aroma, this coffee is grown in a mountainous microclimate of Bolivia 4,900 to 6,000 feet above sea level. Members of AECAR (Asociacion Regional de Productores de Café Caranavi) work hard to constantly improve their organic farming practices and quality of their coffees. I had the pleasure of meeting Javier Castillo, of AECAR, and his daughter, last May in San Diego.

Colombia Santa Marta

New Rainforest Alliance Certified Coffee

This is the best Colombian coffee I've found yet! Santa Marta is produced by small farms which organized into three large coffee farms: Tolima, Onaca and Manzanares. This medium-bodied bean's unique profile is due to the fresh spring water used for processing and sustainable farming practices that are easy on the environment. You'll enjoy the caramelly fragrance of the ground coffee. When brewed there are hints of dark chocolate with a background of floral notes. It has a bit of a dry finish which smooths out as the cup cools.

Indonesian Sumatra
Tunas Indah Mandheling

This is a new Sumatra that has the earthiness and smoothness we love in this origin. Its low acidity makes it a great choice for those prone to a little coffee-induced heartburn. To preserve the character of this bean, only under protest will I roast this one past full city.

Guatemala Adipsa

The Adipsa producer group in Guatemala began as a reforestation project with coffee and shade trees. There is a major focus on environment, protecting wildlife and water sources, education for local children and microcredit loans for members. Varieties that make up this paticular lot include Pache Colis and Pache Cubano along with the more familiar Catuai, Caturra and Bourbon. Notes of honey and sweet chocolate combine well with a nuttiness that makes this a unique coffee profile.

Guatemalan Guaya'b

This shade grown coffee was described by my coffee developer as "wild and crazy" - and was she right!  It comes from Guaya’b Asociacion Civil, a cooperative in western Guatemala where the farmers are of the ethnicity Maya-Popti. Guya'b is grown in the Cunca of Rio Azul (Blue River Valley) at an altitude of 3,250 to 5,250 feet under different layers and shade species which help reduce erosion and create a natural habitat for native and migratory bird species. This bean is snappy and spicy, with a sweet finish, and is great for a single-origin espresso.

Nicaraguan "Los Ositos"

The body of this coffee is somewhere between medium and heavy, and there is a smoky quality to it. The story behind this coffee is wonderful: The farmers who are a part of the San Juan del Rio Coco Cooperatives Union that produced this Socially Responsible, Organic bean decided to build a pre-school with some of their profits. Named "Los Ositos" (which translates to Little Bear Cubs) the school now serves as a daycare and benefits the children of El Naranjo, one of the poorest communities in the region. The cooperative plans to invest in a new social project in one nearby community each year.

Nicaraguan Wiwili

This luscious, sustainable bean is back! Last year's crop wasn't quite up to par, but this one is fabulous. Grown and harvested in forest-covered plantations in Northern Nicaragua, this coffee is dried on decks that use solar-powered dryers and pulping mills that are careful not to contaminate the regional water source, the Rio Coco. Individual families own small plots of land and the members of the local co-op all share in the work of harvest. It may be a little more mild than earlier crops, but there is still a pleasant smokiness to the bean.

An exotic coffee, this luscious shade grown bean comes to us from Chikamagalur in the District of Karnataka. It's bold, smooth and slightly floral, with a long and pleasantly earthy aftertaste.

Ethiopian Harar

This is a bold, heavy-bodied Arabica coffee that is indigenous to the Harrar region of Ethiopia. It has a distinct blueberry aroma when fresh ground and flavor and at Full City roast you may experience notes of black fig and spices. It will be at its best in a French Press, and is a fabulous way to start your day.

This is a flavorful new medium bodied Mountain Water processed bean with no peculiar aftertaste found in some decaf coffees. It performs well as a single origin espresso, as well.

Zambia Mazabuka

This is a heavy-bodied coffee with a rather dry finish that smooths out as the cup cools. It comes from Zambia's upper Kaleya Valley where the coffee farming community sustains and supports a village of 300 people. The estate provides work for over 2,500 additional temporary workers during the peak coffee season. The family that owns the estate started a school in 2001, and Terranova School now holds classes for 210 children. This is a perfect example of a sustainable coffee produced on a family estate owned by people with a commitment to the community. But - because it's a single family estate that is not part of a coffee cooperate, it's not eligible for Fair Trade certification.

We now roast raw organic cacao. The beans, or nibs, are in a thin husk which should be peeled before eating. Then, eat them whole or crush them into your yogurt, onto a salad or enjoy them as-is with a glass of red wine - heavenly!
